I like to make this vegetarian bean stew in my slow cooker. 

6 cups vegetable broth (any broth works)
1 cup dry navy or cannellini beans
1 cup diced yellow onion
2 large carrots, diced
2 celery stalks, diced
2 Tbsp minced garlic
3 Tbsp uncooked white rice
1 tsp dry thyme
salt & pepper to taste

Cook 6-8 hrs on low.
